Organic Chardonnay grapes grown in Spain are pressed and fermented conventionally in stainless steel before the finished wine is gently dealcoholised using low-temperature vacuum distillation. A patented aroma-recovery process captures and returns delicate compounds that might otherwise disappear with the alcohol, helping preserve Chardonnay’s apple, citrus and floral character.
