For the Rosé, organically grown Tempranillo from Spain is first made into wine in the traditional way, fermenting in stainless steel before the alcohol is gently removed by low-temperature vacuum distillation. A patented aroma-recovery process captures delicate compounds that might otherwise disappear during dealcoholisation and returns them to the finished wine, helping preserve Tempranillo’s strawberry, red berry and herbal character.
