The name refers to a two-stage harvest, with one part of the fruit picked at full ripeness and another left longer on the vine before the two components are brought together. In Primitivo, that makes a lot of sense. Puglia already gives the grape its warmth, depth and dark fruit, and this method pushes the wine a little further towards softness and richness without losing its easy, drinkable charm.
