Domaine Giraudon has been farming here for generations, with Aurélie and Thibaut Giraudon now working alongside the family across around 30 hectares. Their Bourgogne Chitry Rouge is deliberately kept simple in the best possible way: Pinot Noir is harvested by hand, fully destemmed and given a short cold maceration before fermentation with indigenous yeasts in stainless steel. Ageing remains in tank for six to twelve months, preserving the cherry, raspberry and freshness of the fruit rather than covering it with oak.
