Doppio Passo takes Sicilian Moscato and first makes it into wine before passing it through spinning cone columns, a gentle dealcoholisation system designed to separate the alcohol while retaining as many of those delicate aromatic compounds as possible. The result keeps the grape’s unmistakable lychee, pineapple, mandarin and floral character while bringing the finished drink down to just 0.45% ABV.
