The family has farmed biodynamically since 2006, with the first respekt-BIODYN-certified vintage released in 2017, and the estate is also EU Organic and Fair Choice certified. 'Buntstück' is their introductory Weissburgunder, grown principally on weathered Buntsandstein, the colourful Triassic sandstone that gives the wine its name and its characteristic freshness and mineral shape. The grapes are selectively harvested by hand, destemmed and given a period of skin contact before gentle pressing, temperature-controlled fermentation and ageing in stainless steel until bottling.
