He became actively involved in the project, from shaping the blend through to the final design, working alongside Les Caves du Commandeur, a Provençal winery founded in 1913 and supported by around 60 local growers. The 2025 combines Grenache and Cinsault grown on clay-limestone soils, with the fruit given a cold pre-fermentation settling before a cool fermentation at 16–17°C and a period of ageing on the lees.
