Rather than skipping fermentation altogether, Vallformosa first makes a white wine and then removes the alcohol by vacuum distillation at a low temperature, a gentler process designed to preserve as much of the original aroma and flavour as possible. Rectified concentrated grape must is then used to restore balance before the wine is pasteurised, carbonated and bottled under pressure. It is a thoroughly modern addition to a producer with more than 150 years of sparkling-wine history – and one that reflects Vallformosa’s wider environmental focus, which saw it become Spain’s first B Corp-certified winery in 2024.\u003c\/em\u003e\u003cbr\u003e\u003cbr\u003e\u003cstrong\u003ePerfect With...
