Tasting Note
Bright gold in the glass, with an intense flor-driven aroma of fresh bread dough and pastry joined by pear, lemon peel, almond and dried Mediterranean herbs. The palate is dry, concentrated and wonderfully energetic, with yeasty richness cut through by crisp citrus, chalky minerality and a pronounced salty tang. Textured without losing its precision, it finishes long and persistent with bitter almond, herbs and a clean, mouth-watering freshness.

The Story
Fernando de Castilla’s 2025 spring release is a limited selection drawn from eight individual casks chosen from more than 300 in the bodega’s Fino Classic and Fino Antique soleras. The wines originate from the historic Añina vineyard area and have an average age of around six years, developing beneath a living layer of flor that protects them from oxidation while building their distinctive bread-like, nutty and saline character. Bottled en rama with only minimal filtration, this release captures the wine close to its condition in the cask, with just 3,600 bottles produced. The year refers to the particular spring withdrawal from the solera rather than a single harvest, making each saca a snapshot of the bodega and its flor at a precise moment in time.
