Tasting Note
Pale lemon in the glass. The nose is bright and open, showing lemon zest, ripe peach and a hint of almond. On the palate it’s fresh yet gently rounded, with crisp acidity balancing a soft, fruit-driven core. There’s a subtle saline note and a clean, slightly nutty finish that adds character. Refreshing but with more weight than your average crisp white.

The Story
Grillo is one of Sicily’s key native white grapes, originally known for its role in Marsala but now firmly established as a quality still wine in its own right. Grown under the intense Sicilian sun, it develops ripe fruit and a natural richness, while coastal influences help preserve freshness. Paolini is a well-regarded cooperative that focuses on expressing the island’s character - generous fruit, bright acidity and that unmistakable Mediterranean feel. This is modern Sicilian white done right: approachable, characterful and built for food.
