Tasting Note
Pale straw in colour, with fresh lime, crisp green apple and lemon zest joined by subtle notes of warm pastry and toasted almond. Bright citrus fruit and vibrant acidity give the palate plenty of energy, while several months on the lees bring a gently creamy texture and soften the wine’s lively sparkle. Fresh, lightly savoury and wonderfully refreshing through the finish.

The Story
DaschBosch traces its history to 1754, when the original farm was established in the Breedekloof Valley, although the winery’s experimental range shows a thoroughly modern willingness to explore unusual grapes and techniques. This sparkling Verdelho is made using the ancestral method, with a wild-yeast fermentation beginning slowly in tank before the wine is bottled while fermentation is still under way. The remaining natural sugars finish fermenting inside the bottle, capturing the bubbles without the need for a separate second fermentation, before four to five months on the lees add texture, pastry-like complexity and a softer edge to Verdelho’s naturally vivid citrus freshness.
